Pesto Pasta

Some pesto pasta anyone???  Today I thought I might grab some pesto sauce offered by the grilled station and make a quick pasta out of it.  I also put some olive oil and vinegar into the sauce to make it a bit more Italian-like.  I also grabbed some offered grilled chicken at the same station and threw that in with the mixed pasta.  Soooooo delicious!!!




Meaty Cheesy Fries

For a little extra zing on my fries today, I grabbed some cheese sauce and some offered taco meat.
I think you know the rest...



Chicken Chipotle Sandwhich

For tonight's meal, the grill section was offering already cooked grilled chicken, so I decided to make my meal with some chicken.  I asked for a "One Bun" (a tiny bun with only 100 calories) from the sandwhich section and grabbed some lettuce and some chipotle mayonase.



The rest is easy, just stack it all up together to make a somewhat spicy chicken sandwhich with a bit of kick thanks to the chipotle sauce.

Bread Dip

My friend made some neat Italian bread dip the other day, so I attempted to make some as well.  She told me that she grabbed some olive oil, balsamic vinegar, oregano, parmesan, and some italian bread.



Just mix it all together and dip in!


Poor Man's Pizza

I was craving some pizza today but did not want the same old pizza offered every day.  Therefore, I grabbed some mozarella sticks and sliced them in half and placed them on a toasted English Muffin.




Chicken Parm!

Who doesn't love chicken parmesan???  I know that I do!  Today I had a little extra time at lunch so I asked for a grilled chicken to make some chicken parm!  I just grabbed some marinara sauce and some mozarella cheese.





Pasta Salad

For another cold, snowy day outside, I decided to have a bowl of soup for lunch.  To add a side dish so that I wouldn't be hungry halfway through my afternoon classes, I decided to make a pasta sald.



For this dish, I grabbed a cup of noodles, some olive oil, oregano, tomatoes, onions, and mushrooms.  I just mixed it all together to create this delicious dish!



Christmas Milkshake

Since we're in the holiday mood, I decided to create a milkshake--college cafeteria style.  I just grabbed a cold glass of skim milk and put my soft serve ice cream directly into the glass.



I just mixed up the solution with a fork in a whipping motion and, of course, topped it off with some red and green sprinkles.

Shish-Ka-Bob

Yumm!  My friend and I were at dinner and they were offering some steak.  We decided to go ask the sautee chef to sautee up some mushrooms and green peppers.  We couldn't find a wooden stick, so we opted instead for a straw.  So college of us.



We just stacked up the steak, mushrooms, and green peppers and voila!




Ants on a Log

Ants on a log...  Pretty self explanatory.  I went and grabbed some celery, peanut butter, and some raisins. 



My friend made them look so presentable.




Farmer's Eggs

For a quick breakfast meal the day of an early exam, a quick fix of eggs will get my brain working bright and early.  I decided to skip the line for an omlet made to order and to add my own zing to some eggs by throwing on some salsa on some already prepared hard boiled eggs to create some Farmer's eggs!!!




Taco Dip

Taco Dip!!!  How can one not love taco dip?!?  Since there was some left over nacho chips from the taco bar the other night, I decided to make some taco dip.  Sooooo I grabbed some salsa, black olives, sour cream, as well as some tomatoes.



Dice up the tomatoes into smaller pieces and throw them into the rest of the ingredients all mixed together. Enjoy the dip with the nacho chips!


Fruit (Salad)

Today's fruit salad is barely a salad.  Grabbed all the different kinds of fruit in the dining hall, cut them up, and mixed them all together in a bowl with a liiiiiiitle bit of lettuce and some raspberry dressing.

Root Beer Float

For this special dessert, I had a little help from my friend.  Her favorite dessert to make is a root beer float, so I asked for her help.  She grabs a cup of ice cream, a cup of sprinkles, a cup of root beer, and swipes some whipped cream off of  a pre-sliced piece of pie.



The mixing is easy, just dump the ice cream into the root beer then top it off with whipped cream and the sprinkles!



YUMMMM!


Taco Salad

Oh the dreaded salad.  But good news, today there was a taco bar.  Therefore, I decided to skip the usual burritto style taco.  Instead, I grabbed a big bowl and stuffed all of my favorite taco ingredients into it.



After mixing all of the ingredients, this salad looks nothing like a salad...not to mention tasting like one either!!!


Fruit Jello

I stole this idea from my grandma who always makes fruit jellos during the holidays.  I grabbed some green and red jello (very festive) and an orange and cut up the orange.


Just throw it all together in a bowl...and one delicious dessert will you have!

Peanut Butter Chocolate Dessert

For dessert, I was craving some peanut butter and chocolate and decided to create an ice cream treat with some mixed in peanut butter and some rise cereal.


After mixed all together, this treat tasted absolutely delicious!!!



And my friends thought so as well!




Yogart Side Dish

This past week has been nothing but freezing temperatures and snow, so I've been feeling like warming up with a bowl of soup all week.  To add a small-calorie side dish, I grabbed some vanilla yougart, some raisins, and some granola cereal.


I just poured the yogurt onto the peaches and granola.  A quick, easy, and healthy side dish!



Yumm???

Spinach English Muffin

Today's light lunch consists of a tiny, tea-party-like sandwich.  I quickly grabbed an English muffin and tossed it into the toaster to give it a quick color.  While the muffin was toasting, I went to grab a spinach and feta cheese puff pastry at the vegetarian station along with a slab of cream cheese.

 Rub a good amount of the cream cheese onto the toasted English muffin.  Next, I cut open the pastry portion of the puff and took all of the spinach and feta cheese combo out on placed it all onto the other side of the English muffin.  Place both sides together and, VOILA!  A perfectly portioned lunch sandwich!

Sweet Banana Dessert

For a quick homemade dessert in the dining hall that's lower in calories than stuffing your face with cookies, grab the daily fruit and have some fun sweetening it up.  I grabbed a banana along with some peanut butter and some cinnamon and sugar.


I cut up the banana into bite size pieces and sprinkled the cinnamon sugar on top.  I slabbed the peanut butter on the side of the plate to create some pizazz.  Just dab the bananas into the peanut butter and ENJOY!


 

Cold Day Soup and Grilled Cheese

What's better than tomato soup and a grilled cheese on a cold day?!  Today's light lunch consists of a some already prepared tomato soup and a grilled cheese.  I also grabbed some rice to beef up my soup to hold me over until dinner time.



I dumped the rice into the soup to add a little touch, and to add a taste from home, I cut off the crusts on my grilled cheese not only to bring back the idea of home but also to lighten the meal.  To add some more zazz to my meal, I added some presliced lemon to my diet coke.


Tuscan Pasta

Today was such a busy day that I only had time for dinner.  I found an already made Tuscan salad at the vegetartian station with tomatoes, corn, blue cheese, diced red onions and green peppers, topped with a balsamic and vinegar salad dressing.



For a quick fix to the dreaded salad, I placed the salad's toppings onto some fettucine noodles and some speghetti sauce.  The product?  A DELICIOUS pasta...YUMMM!
